Pine Nut Arugula Salad


I went out to eat a couple weeks ago and had the perfect arugula salad. It’s hard to imagine that a salad with so few ingredients could really churn up that much excitement but it’s simplicity was what made it so great. I tried to recreate it at home and ended up enjoying it just as much. The lemon dressing goes really well with the peppery arugula and the toasted pine nuts add a great crunch.

Ingredients:
1 package arugula
1/2 cup pine Nuts, toasted
1/4 cup lemon juice; about 2 lemons, juiced
1/2 cup extra virgin olive oil
1 shallot, minced
salt and pepper, to taste

Directions:
1. Add shallots, lemon juice, salt and pepper to a small bowl. Let sit for 10 minutes. Slowly whisk in olive oil until emulsified.
2. Add arugula and pine nuts to a large bowl, then dress.
